Bananas

Bananas are high in vitamins, potassium and minerals. When you compare it to an apple, it has four times the protein, twice the carbohydrate, three times the phosphorus, five times the vitamin A and iron, and twice the other vitamins and minerals.

What do I do with it?

The obvious answer here is to peel it and eat it but as an alternative you could try our recipe. Thanks for this week the recipe to Diane in East Goscote. I can vouch that this is utterly delicious.

Banana and Walnut Loaf
3oz soft butter or margarine
4 oz castor sugar
1 large egg beaten
8 oz plain flour
2 tsp baking powder
4 bananas mashed
grated rind of 1 lemon and 1 orange
2oz roughly chopped walnuts

1. Line base of a 2lb loaf tin with baking parchment and grease sides well.
2. Sift flour & baking powder into a bowl with sugar, fat and egg. Mix together until combined (quite dry)
3. Add orange and lemon rind, bananas and nuts, mix again.
4. Pour into tin and level top. Cook for 50-55 minutes at 180 degrees or until golden and well risen.
5. Cool in tin for ten minutes then transfer to wire rack.
