The french beans we have are mainly purple which look great, unfortunately they don't keep their colour when cooked but can be eaten raw. A good source of vitamin A. The ancestor of the modern French Bean originated in South and Central America. The beans have been cultivated in that part of the world since ancient times and were brought over to Europe after the Spanish conquest What do I do with it? Fragrant French Beans: Cut into 2.5cm pieces. Cook 1 chopped onion in olive oil until tender, add the beans, lower the heat, and leave to cook gently for 5 mins. Add 1-2 large crushed cloves garlic, a bunch of chopped fresh coriander, 1/4 tsp ground cinnamon, 1/4 tsp allspice, 1/2 tsp flour and 75ml water, stir well, bring to the boil, cover and simmer for 10 minutes until the beans are tender. Stir in 1 tbsp lemon juice and season to taste, goes well with fish and pork |
