Broccoli (purple sprouting)
It is very easy to over-cook, therefore it lends itself to quick cook methods such as steaming or stir-fry. The best way to store purple sprouting broccoli is in plastic bags in the fridge. It is packed with vitamin C and is a good source of iron, folic acid, calcium, fibre and vitamin A.

Purple Sprouting Broccoli and Creamy Carrot Slaw

2 tbsp mayo
11/2 tbsp lemon juice
11/2 tsp onion grated
11/2 tsp Dijon mustard, coarse grained
350g purple sprouting broccoli finely chopped
225g peeled and grated carrot
Salt and pepper to taste

1. Combine the mayo, lemon juice, onion and mustard in a medium bowl and whisk to blend.
2. Add broccoli and carrots and mix well.
3. Season and refrigerate to blend flavours before serving.
