Oregano
Also known as wild marjoram, fresh oregano has a more subtle flavour than
dried oregano.
In Greek 'Oregano' means 'Joy of the mountains'. It's characteristic of
many Greek dishes (particularly lamb) and in the UK is often sprinkled
liberally on pizzas.
Marjoram
Sweet pine and citrus flavours apparently! Use in a similar way to oregano.
Member of the mint family. Said to be the 'meat herb' but also goes well
with vegetables.
Chervil
Delicate herb used to season mild flavoured food such as chicken and young
veg. Sometimes known as 'gourmets parsley'. It is a member of the carrot
family and used to be used as skin cleanser and a blood purifier however
we give no guarantees! Add near the end of cooking or raw as too much
heat will cause it to lose its flavour,
Parsley
Parsley can be used in almost any savoury dish. It's especially good used
in soups and sauces. Chop or shred it and mix with butter to melt over
fish or to glaze vegetables.
